September 21, 2010: Moroccan!
Tuesday, September 21 is going to be Moroccan night! What is even more awesome about this upcoming night is that the October issue of Everyday With Rachael Ray has several Moroccan-inspired recipes. Perfect timing!
It's actually one of my FAVORITE issues of the magazine because it's loaded with fall recipes that will be very beneficial for some of the other upcoming Fruit of the Spirit nights. So grab it off your local newsstand today!

I will be making a Moroccan Cucumber Salad
ReplyDelete2 Med. Cucumbers peeled and grated
1 tbsp sugar
1 tsp vinegar
1 tbsp olive oil
1/4 tsp sal
1/2 tsp Za'atar
8 oz black olives - optional
Squeeze cucumbers dry - combine sugar, vinegar, oil, and salt and sprinkle with Za'atar and olives.

Tzatziki Sauce

8 oz Greek yogurt
2 tbs olive oil
1 tbs lemon juice
1/2 tsp salt
1/2 tsp ground black pepper
1 tbs chopped fresh dill
3 cloves pressed garlic
In a mixing bowl, combine the yogurt, olive oil, lemon juice, salt, pepper, dill and garlic. Blend thoroughly and serve.
