October 26 ~ Autumn Fruits & Vegetables!


October 26 is an ingredient challenge! Everyone needs to pick a fruit or vegetable that is harvested in the fall and find a recipe to make. Good examples include pumpkin, acorn squash, butternut squash, corn, pears, and so much more! If you need help, check out this link:

I am going to make Parmesan-Roasted Butternut Squash. I love butternut squash!! My recipe is from Epicurious.com...

Parmesan-Roasted Butternut Squash
  • 2 1/2 pounds butternut squash, peeled and cut into 1-inch pieces
  • 3/4 cup heavy cream
  • 3 sage leaves
  • 2/3 cup finely grated parmigiano-reggiano

  • 1. Preheat oven to 400°F with rack in middle.
    2. Toss squash with cream, sage, 1 teaspoon salt, and 1/4 teaspoon pepper in a 2-quart shallow baking dish. Bake, covered, 30 minutes.
    3. Stir in half of cheese and sprinkle remainder on top. Roast, uncovered, until squash is tender and beginning to brown, about 20 minutes. Let stand about 5 minutes before serving (cream will thicken).

    2. I am making Spaghetti Squash Chicken Alfredo

      1 small spaghetti squash (about 2 pounds)
      1 Laughing Cow Light Herb and Garlic cheese
      2-4 Tbsp crushed garlic

      Oil or Butter spray (to taste)
      2 Tbsp light Parmesan cheese
      4 4-oz cooked chicken breasts


      1. Cut squash in half, lengthwise.
      2. Remove seeds with a spoon or fork.
      3. Wrap each half in plastic wrap and put both halves in microwave for 6-11 minutes, depending on size.
      4. Remove squash halves from microwave, let sit with wrap on for 1-2 minutes.
      5. Put Laughing Cow cheese in bottom of large bowls and smoosh it around.
      6. Scrape out insides of squash gently with a fork and put in bowl on top of cheese.
      7. Add garlic and stir ingredients well.
      8. While stirring, add butter spray to help blend ingredients.
      9. Slowly sprinkle Parmesan cheese and stir. 10. Add cooked chicken breasts and voila-- Chicken Alfredo!
